Ingredients:

For pasta

12 oz (340 g) Pasta ( penne, fusilli, or Spaghetti ), 1 tsp salt and water.

For the Vegetables:

1 zucchini sliced,1 cup cherry tomatoes, 1 cup broccoli, 2 Cloves garlic,,minced, 2 tbsp olive oil, salt and pepper as per taste.

For the pesto:

2 cups fresh basil leaves, 1/3 cup grated parmesan cheese, 1/3 cup pine nuts (or use walnuts if pine nuts not available), 2 cloves garlic, 1/2cup olive oil, salt and pepper as per taste.

Instructions

Cook the pasta:

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Reserve 1/2 cup of pasta water before draining.

Prepare the Vegetables:

Heat olive oil in large skillet over medium heat. Add minced garlic and saute for 30 seconds until fragrant. Toss in Zucchini and broccoli. Cook for 5-7 minutes until tender. Add cherry tomatoes and cook for another 2-3 minutes. Season with salt and pepper.

Make the Pesto:

In a food processor or blender, combine basil, parmesan, pine nuts, and garlic. Blend until roughly combined. Slowly drizzle in olive oil while blending until smooth. Season with salt and pepper to taste.

Combine everything:

In the skillet with the vegetables, add the cooked pasta and pesto. Toss to coat. If the sauce is to thick, stir in reserved pasta water, a a tablespoon at a time, until desired consistency is reached.

Serve:
